It’s starting to look (and almost feel) like Spring, which means summer is just around the corner…which means it’s almost BBQ season!

In preparation for the season of ‘the Q’, Well Seasoned is hosting a special Pit Master class this Sunday, April 19th, taught by Chef Paul Kirk, the Kansas City BARON of BARBEQUE.  Chef Paul has won the World Championship of BBQ 7 times and has won nearly 475 cooking awards!  And, ummmm, did I mention the guys at Organge County Chopper created a customized bike in honour of Paul and his business partner Andrew Fischel’s  restaurant RUB, called the “RUB Chopper“?  You know you’re good when they make choppers for you.

I had the absolute pleasure of chatting with Chef Kirk this weekend about his love of BBQ.  I am now totally inspired to fire up the barbie and hone my BBQing skills.  And thanks to Chef Kirk, I have some helpful tips and yummy recipes to help me on my way. 

Five Minutes with the Baron of BBQ:

TUS:  What inspired your passion for BBQ?
PK:  I just love good food.  I’ve been cooking since I was nine years old.  I cooked with my mom…probably so she could keep an eye on me! (insert friendly chuckle here)  No seriously, I just want to put out the best food I can and I want to help others do the same.  That’s why I teach – so I can help give people the tools to succeed and do well with their cooking.

TUS:  What are some important tips you would give to a budding pit master?
PK:  Don’t be afraid to experiment, try new things and play around a little with your ingredients and cooking methods.  Pay attention to what you’re doing every time you cook, so that each time you’re learning and building on your experience.  But mostly, I tell people to have fun, enjoy it…and be patient!

TUS:  What is your favourite BBQ recipe?
PK:  My favourite recipe is our Szechuan BBQ duck, which we serve at the New York location of RUB…and outside of BBQ, I also really love Chinese cuisine. 

TUS:  Anything new and exciting coming up for you?…besides your visit to Langley next week?
PK:  I have my 5th cookbook coming out nationwide on May 5th!

More about the Pit Master Class:
Previous students of the Baron’s class have said Chef Paul can take 3 years off trial and error experimenting on your own. This class is suited for the back yard BBQ enthusiast, the seasoned competitor, or those considering opening their own BBQ joint.  The Baron will cover the basics of Barbecuing Brisket, Pork Butt, Pork Ribs, Chicken, and Sausage. He will also cover fire management, fuels, BBQ rubs and spices, BBQ sauce, contest presentation and many other subjects.
